May Recipes

Since our May enrichment was based on Crockpot, BBQ and Dutch Oven Cooking we will stick with that theme for May. If you have any recipes you would like to add in any of those areas that you didn't get a chance to in time for them to be printed for enrichment, then just click on comments and leave them here. We also have some specific interest from some sisters for Crockpot Breakfast and Dessert Recipes.

Here are some that were brought on May 6th.

Sweet & Sour Chicken or Pork
(Verla Wheeler)

Brown pork or chicken (small pieces)

Cut carrots (French cut) and onion and boil in a small amount of water to get carrots tender.

In crock pot:

Add Sweet & Sour Sauce*

Add tender carrots & onions

Add sliced water chestnuts and meat.

Simmer. Just before serving add strips of bell pepper and pineapple tidbits. Cook until bell pepper is done.


*Sweet & Sour Sauce for Egg Rolls

Bring to boil:

1 cup sugar

½ cup water

¼ cup vinegar

1 teas. salt

Add:

1 Tbsp ketsup

2 Tbsp. cornstarch mixed with some water.

Bring again to boil.


Chicken Stroganoff

Combine in crock pot and melt: (takes about 10 minutes)

1 can cream of mushroom soup

4 oz. cream cheese

4 Tbsp. butter

1 pkg. Good Seasons dry Italian Salad Dressing mix

Add up to 4 boneless skinless chicken breasts. Cook on low 6-8 hours. Serve over noodles or rice.

Before serving remove breast pieces and cut in small chunks.
